Baked feta with blackberries, rosemary and honey

Just when you thought the oven-baked feta trend was over, here comes another one. But really, I first tasted baked feta a long time ago, at a friend’s house who served it to use as an appetizer with a lovely roasted tomato sauce. Since, I’ve made a number of times, with all sorts of fruits and veggies, from eggplant to peaches and now with blackberries. I like this variation because it is very summery and packed with flavor. The blackberry, honey, and rosemary combo is just amazing. It smells wonderful while in the oven and is delightful served as an appetizer with toasted bread and a peppery rocket/arugula salad on the side.

Ingredients

  • 1 package of feta
  • 1 cup blackberries, washed and dried
  • 2 tbsp raw honey
  • 1 sprig of rosemary (about 10 leaves)
  • 4 tbsp olive oil
  • Freshly ground pepper

Instructions

  1. Preheat oven to 175 C
  2. Place the feta in a small oven proof dish
  3. Top the blackberries over the cheese. Drizzle with honey and sprinkle rosemary leaves on the berries.
  4. Drizzle the olive oil all over the cheese and berries
  5. Bake in the oven for 20 minutes or until the cheese is golden and the berries are slightly roasted
