I love eating yogurt and fruit in the morning but once in awhile, like to give my system a dairy break. That’s when fruit “bowls” and I become best friends. What I love about them is that unlike their cousins the smoothies (which I psychologically consider to be snacks not meals), there is no straw or glass involved: you sit down, use a proper spoon and eat. The fresh creamy fruity base is filling and nutritious, yet easier to digest for most people. Top it with any super food you have on hand – dried berries, seeds, granola, nuts, fresh fruit, a drizzle of honey, nut butter or whatever else tickles your fancy – the combinations are really endless. Here is one that pops up regularly at our house, especially on hectic weekday mornings.
Ingredients
- 1/2 cup strawberries, frozen
- 1 small banana
- 2-3 tbsp plant-based milk (cashew, almond, coconut, etc)
- 1/2 tsp chia seeds
- 1/2 tsp vanilla extract
- 2 tbsp pumpkin seeds
- 1 tbsp coconut flakes
- 2 strawberries, sliced
- pinch of flaxseeds, freshly milled
Instructions
- Using a high speed blender, blend the frozen strawberries, banana, milk, chia seeds and vanilla
- Once smooth – about 30 seconds – pour it in a bowl and top it with all the other ingredients. Serve immediately.
