Scheherazade’s overnight oats

You all know just how much I love overnight oats, right? They’re high in fiber, filling yet easy to digest, tasty, easy to make ahead of time…and all that.

But that’s not what this recipe is about.

Here, aromatic nectarine and saffron compote, orange blossom water-infused oats and sinfully lustrous almond butter turn a totally normal breakfast into something out of the 1001 nights.

Serves 1 big eater or two love birds

Ingredients

  • 1/2 cup gluten free rolled oats
  • 1 tsp flaxseeds (milled) or hempseeds or both
  • 1/2 cup water, almond milk or regular milk
  • 1/4 cup orange blossom water
  • a pinch of cinnamon
  • 1/3 cup my wholly delicious nectarine vanilla compote
  • 2 threads of saffron, crushed with a mortar
  • 3 tbsp your favorite almond butter or my almond cashew butter

Instructions

  1. Place the first 5 ingredients in a bowl, combine well, cover and let rest in the fridge overnight or for up to 24 hours
  2. In the morning, mix the saffron into the compote and heat covered in the microwave for 30 seconds or until very warm
  3. Pour on the oats and drizzle with almond butter

 

Note: To make this even more wow, add a dollop of fresh yogurt
