Going off processed sugar can be hard when you start, so having genius substitutes like this jam is a life saver. Because berries have seeds anyway, the chia actually goes unnoticed and you get all its superfood benefits. The other wonderful thing is that it takes all of 10 minutes to make and you can’t mess up the gelling process thanks to the chia.
Delightful spread on your favorite toast, it is also divine when used as a coulis on top of oatmeal, thick yogurt, creamy desserts like panna cotta or even cheesecake.
Ingredients

1 cup blueberries (fresh or frozen and thawed)
- 2 cups raspberries (fresh or frozen and thawed)
- 2 tbsp lemon juice (freshly squeezed)
- 1/2 tsp vanilla extract (optional)

3-4 tablespoons coconut nectar or maple syrup

¼ cup chia seeds
Instructions
- Place the berries, juice, maple syrup and vanilla in a pot over medium heat and simmer for 5-10 minutes, stirring regularly and slightly mashing the fruit with a spoon or fork
- Remove from heat, add chia seeds and mix well
- Replace on the stove at medium to high heat for one or two minutes, mixing well. If the consistency is a bit too liquid, cook for a bit longer
- Let cool slightly and pour into jam jar or other heatproof container and cover. Let cool completely before you store it in the fridge.
