You won’t be disappointed with this luscious pear chocolate clafoutis.
Clafoutis is a traditional French dessert that is somewhere between a cake and a flan. It’s typically made with fresh cherries, but most fruits work, so pick seasonal ones that look the best at your local market. I personally love apricot and plums in the summer and in the fall/winter period, the pear and chocolate combination totally wins me over. Regardless, it’s healthy-ish but sinful tasting and comforting, just the sort of thing you need when the cloudy, rainy days are getting the better of you. Doesn’t happen much in Dubai I have to say, but no reason why I would restrain myself from making this delightful beauty. Oh and this version uses gluten-free flour and coconut sugar so it’s pretty “safe” if you are trying to steer clear from those ingredients and won’t compromise the taste one bit.
Ingredients
- 3 eggs
- 1/3 cup coconut sugar
- 1 cup milk, slightly warmer than room temperature
- 1 tsp vanilla
- 1/4 cup butter, melted
- 1/2 gluten-free (or regular) flour
- 1/3 cup almond flour
- 1/2 tsp baking powder
- 4-5 medium pears, peeled, poached and sliced – or canned pears, sliced
- 1/2 cup chocolate chips (I like dark, but pick whichever you prefer)
Instructions
- Preheat oven to 375F
- Line an 8 or 9 inch roud cake pan and line it with parchment paper or grease it. Set aside.
- In a small bowl, combine almond flour, gluten-free flour, baking powder and salt. Set aside.
- In a large bowl, whisk eggs and sugar for one or two minutes
- Whisk in the milk, vanilla extracted and melted butter
- Add flour mixture and pears to the bowl and combine. The batter will be quite liquid. Pour into the prepared cake pan. Drop the chocolate chips on top of the pan and place in the oven for 25-30 minutes or until golden and firm to touch. Take out of oven and let cool before serving.
