Lively cilantro citrus tahini sauce

This alfresco sauce isn’t just a nice salad dressing but a great accompaniment to grilled fish, meat and vegetables. The lemon and lime bring a nice zing to it while tahini gives it a luxurious texture and unique taste. All the ingredients are also exceptionally healthy, especially if you are in detox mode: tahini is rich in minerals, B vitamins and methionine (liver detoxer), cilantro brings vitamin C, is a good source of antioxidants and great for heavy metal detox – as for garlic – well, I don’t eat it because of my fructose malabsorption issues, but as you know, it has a long list of virtues.

For 1/2 cup

Ingredients

  • A bunch of cilantro, big stems discarded
  • 1/3 cup olive oil
  • Juice of 1 – 1.5 lemon
  • Zest of one organic lime – or a few drops of lime essential oil
  • 3 tbsp tahini
  • 1 clove garlic (optional)
  • Pink Himalayan sea salt

Instructions

  1. Place all ingredients in a blender or food processor and blend them
  2. If you want the texture to be a little more liquid, feel free to add some extra olive oil
  3. Cover and chill until you are ready to serve. It is best if eaten on the same day.
