Have you noticed figs sprouting up at the supermarket lately? When they do, I get a bunch of them and go recipe-crazy. They are easy to prepare poached, roasted or – my favorite – raw, like in this effortless yet stunning little salad, where it marries beautifully with creamy goat cheese and toasted walnuts. It’s almost too easy to make to get credit for, but it’s a nice change from more savory salads so I had to post it.
Fresh figs are also a great source of minerals and also of are a good source of antioxidant vitamins A, E and K – just another great reason for eating them while they are still in season.
Ingredients
- 4 cups rocket, rinsed and dried
- 1/2 cup creamy goat cheese, crumbled
- 1/4 cup walnuts (or nuts such as pecan or pine nut), toasted in the oven and halved
- 1/3 cup olive oil
- 2 tsp balsamic vinegar
- 1 tsp honey
- salt, pepper
Instructions
- Place rocket on a large serving bowl
- Add figs, crumbled cheese and walnuts
- Prepare the dressing by whisking together balsamic vinegar, honey and olive oil, together with a pinch of salt and pepper
- Drizzle dressing on salad and serve
