Burrata tomato and tapenade

Decadent burrata, tomato & tapenade in a shot glass

As I continue my series of easy summer appetizers, here’s one that I made using last week’s leftover tapenade. Burrata is so deliciously rich and creamy it makes a scoop of Hagen Dazs feel light. Serving it in a shotglass however, somehow makes this indulgence a lot more reasonable, which is why I am a big fan of this appetizer. If you don’t have tapenade, you can easily swap it for some homemade pesto for an equally mouth-watering nibble. Good tomatoes are really key – in Dubai, I have yet to find really tasty and sweet tomatoes like you find in Méditerranean countries, but cherry tomatoes can do the trick.

Ingredients

  • 1 1/4 cup of cherry tomatoes
  • 10 leaves of fresh basil, cut into slivers
  • 1/4 cup of good quality olive oil
  • 1 large burrata
  • 1/2 cup of tapenade

Instructions

  1. Quarter the cherry tomatoes and toss them in a bowl with the olive oil, half the basil, salt and pepper. Set aside.
  2. Take a shot glass and put a spoonful of burrata at the bottom, followed by a spoonful of tomatoes and one of tapenade that you smooth over. Sprinkle with some basil.
  3. Repeat with your other shot glasses and place covered in the fridge until you are ready to serve. These can be made 4 hours ahead of time.
