After several failed attempts at making the kiddos at my house appreciate vegan pancakes that are also high in fiber, I found a winner and this is it. I marketed them as “caramel” pancakes because and “oatmeal and date” would not have lured them in. It might sound misleading, but really, the combination of Medjool dates with maple syrup and vanilla extract really does give an amazing caramel flavor. I promise.
And as mentioned above, these pancakes are not only absolutely delish, but also super high in fiber thanks to all the nourishing flours and chia seeds. This means they will keep you going all morning without making you feel heavy. The perfect breakfast food.
Note: I include sorghum flour in the ingredients because it’s not only great for baking but also an ancient grain that is high in antioxydants and nutrients. It can easily be found in most supermarkets in the gluten free section.
Ingredients
- 11/2 cup gluten free oat flakes
- 3 Medjool dates, pitted
- 2 tbsp sorghum flour
- 2 tbsp almond flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1-2 tsp milled chia seeds or milled flaxseed
- 1 1/4 cup almond milk or other plant milk
- 2 tbsp coconut oil (odorless or cold pressed)
- 2 tsp natural vanilla extract
- 2 tbsp maple syrup
- Toppings: maple syrup, pecans, sliced bananas or other fruits of your choice
Instructions
- Using a high speed blender, mill the oat into a flour – around 45 seconds at a high speed
- When you have a fine flour, add the dates and mix at high speed for another 30 seconds
- Pour this flour into a large bowl and mix in all the other dry ingredients until well combined
- Whisk in the milk, coconut oil, maple syrup and vanilla extract until combined
- Heat a non-stick griddle at medium heat and grease with a few drops of coconut oil and then scoop out 2 tbsp of the batter onto it. When little bubbles start to form (45 seconds to a minute), flip over the pancake (it should be golden brown) and leave for another minute. Repeat with the rest of the batter.
- Serve topped with maple syrup and chopped pecans or fruit of your choice
