Lazy mamma’s overnight matcha coconut oats and yogurt

Don’t know about you, but whether I eat breakfast or not, by the time 11 am rolls around, my stomach is growling and I’m counting down the minutes until lunch time. In come overnight oats. Apart from requiring minimal effort, oats are an excellent source of fibre, are filling and will get you through the morning without weighing you down. Here I experiment with matcha powder, fresh coconut and banana, which marry very well together and are all superfoods in their own right.

Serves 2-3

Ingredients

  • 3/4 cup of gluten free oatmeal
  • 1 1/2 cup of almond or coconut milk
  • 1 tsp matcha powder
  • 1 tsp agave syrup or natural sweetener of your choice (optional depending on your sweet tooth)
  • 2 small pots of coconut milk yogurt (I use coco yogo because it’s sugar free, but use the one you like)
  • 1 banana, sliced
  • 1/4 cup of fresh coconut, sliced (I use the fresh coconut chunks that are pre-cut at Spinneys but feel free to use dried coconut)
  • 1 kiwi fruit, sliced
  • 2 tbsp crushed pistachios

Instructions

  1. Mix oats and matcha powder.
  2. Add milk and agave syrup. Let the mixture soak overnight.
  3. The next morning, check the consistency of the oatmeal and add more almond milk according to taste
  4. Take a scoop of oatmeal and place it in a jar or glass and layer it with a big spoonful of coconut yogurt, sliced bananas, sliced kiwis
  5. Top it off with another spoonful of yogurt and some fresh coconut and pistachios.
