The only regret you’ll have with this genius appetizer recipe is that you didn’t make enough. These alluring blue tortilla bites are as delectable as they are pretty, making them a unanimous crowd pleaser. The avocado feta cream is magic and I frequently serve it with quesadillas as well. As for the intriguing blue corn chips – yes blue corn does exist, they didn’t just put food coloring 🙂 – they have high protein content and slightly less starch than their yellow and white counterparts, making them a little bit more nutritious. They’re easy to find in North America and to my delight, have popped up on mainstream Dubai supermarket shelves this year.
Ingredients
- 20 blue corn tortillas
- 1 avocado
- 1/2 cup feta
- Juice of 1 lime
- 1 tbsp olive oil
- 6 thick slices of chorizo, diced
- Salt and pepper to taste
Instructions
- Make the avocado cream by placing the avocado, feta, lime juice and oil in a little blender and blitzing until smooth. Add salt and pepper to taste and set aside covered in fridge until ready to use.
- Saute the chorizo over medium heat in a saucepan until lightly browned, set aside
- Assemble the bites by putting a generous spoonful of avocado cream and topping with 3 pieces of chorizo on each tortilla
- Serve on a large platter
